DIY Seed Starter Container

One of the best gifts I got this holiday was Grow Great Grub by Gayla Trail. My boyfriend and I are finally in an apartment that has a small outdoor area where we can put in a garden. Its basically just an oblong patch of dirt, but I have big plans for that little space.

Since I live in the Pacific Northwest I can start my indoor plants pretty early. On top of that, we've been having a warm and wet winter, so hopefully I'll be able to get things in the ground sooner as well.

One of the coolest ideas from the book is a DIY toilet paper roll seed container. I'm really excited about the process and I hope to continue keeping this blog updated with how it works out. I highly recommend picking up this book if you want to get started growing food in an apartment. I read through the entire thing in one sitting!

Toilet Paper Roll Seed Starter Container
What you will need:
1. Seed Packets       2. Toilet Paper Rolls       3. Yarn or string       4. Container to catch water
T.P, yarn or string is all you need!

I'm starting with leafy greens

To get started, tie your toilet paper rolls together loosely with your yarn or string. Place them in your water catch container.

Next, pack your dirt almost to the top. Keep in mind once you water it the dirt level will go down.

Last, plant your seeds according to the instructions on the seed packet. Get the soil moist and place it on a sunny windowsill. Wait for the seeds to germinate! I'll be posting pictures as my little plants progress and when its time to transplant. Keep following for more updates^^

Baking FAIL and SUCCESS: Death by Christmas Cookies

For those of you who read my previous entry, you already know I failed once at making fudge. After my first attempt, the fudge failed to harden. I took some well-meaning advice from some people (the internet) and decided to boil it down again and see if it hardened after the second attempt.I wanted to make sure I boiled it long enough, so I stood there for five minutes stirring and stirring, hoping that my fudge could be saved. I put it in the fridge overnight pretty confident that by morning I would have some decent fudge. Needless to say I was pretty disappointed when I got up the next morning to find caramel in my fridge. The stickiest, gooiest, most useless caramel ever made by man. And because it was so difficult to get out of the pan it ended up all over my kitchen.

Needless to say I abandoned the fudge idea and decided to go with a tried and true recipe:

What you will need:

  • 1 cup butter, melted
  • 1/4 cup white sugar
  • 1 1/4 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 3/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 cups semisweet chocolate chips
  • chocolate chips
  • 6-8 peppermint candy canes
Preheat your oven to 375 degrees F. In a large mixer bowl, beat butter, sugar, eggs, and vanilla together until light and fluffy. In a separate bowl, combine the flour, cocoa, baking soda, and salt together, then add to the wet mixture, mixing until well blended. Stir in the chocolate chips. Drop by rounded tablespoonfuls onto un-greased cookie sheets. Bake for 8 to 10 minutes.

Next, smash your candy canes to smithereens. You can try to get a variety of sizes or you can just ground them into powder. Place in bowl.

Last, melt about 3/4 of a bag of chocolate chips. You can do this a few different ways. I put a glass bowl over a saucepan of boiling water.  Dip the cookies halfway into the chocolate, then dip them into the candy cane bowl. Set aside on foil or wax paper to harden.

Getting the chocolate evenly over half the cookie is the hardest challenge. Other than that these are a fun and easy cookie to make!

Holiday Baking

I'm in the midst of finishing my holiday baking and I'm having issues getting my fudge to harden. I decided to melt it back down, boil it for longer and then see what happens. It is currently sitting in the fridge waiting to disappoint me. In the meantime I've been distracting myself with pictures of successful fudge.

DIY Holiday Baking: Cake Batter Cookies

Every year I fool myself into thinking I'm going to become a master baker during the holiday season. I bookmark complicated looking breads and pastries, only  realizing until much later that I'm going to have to buy half the equipment required to bake them. That doesn't stop me from aiming high though, and I begin  more than one grocery shopping list before abandoning it due to lack of funds. Despite my high hopes, the reality is I probably try two or three new recipes every year and rarely venture outside of my chocolate chip filled comfort zone. Every once in awhile however, I find something so great I feel the need to share with others. And yes, these have passed the boyfriend test.

1 1/2 sticks (or 3/4 cup) real butter
3/4 cup brown sugar
1/4 cup sugar
1 (3.4 oz) package instant vanilla pudding mix
3/4 cup yellow cake mix
2 eggs
1 tsp real vanilla
1 tsp baking soda
2-1/4 cups flour
1/4 tsp salt
optional: sprinkles

Preheat oven to 350 F. Stir together flour, salt and baking soda and set aside. In a large bowl, cream butter and sugars together. Add in pudding package and cake mix and beat until well blended. Add eggs and vanilla and mix until smooth. Add flour mixture slowly until well incorporated.  Roll into 1" balls and place on greased baking sheet. Bake at 350 F for 10-12 minutes.
