Greek Fries Recipe



 A huge goal of mine has been to create less waste. We stopped using paper towels, switched to canvas bags instead of plastic and we make sure that every possible thing that can go into the compost, does. While I do want to decrease my carbon footprint, I also understand there is no way to live without making an impact on the environment. I do however want to make sure that impact is mostly positive and be able to feel like I am doing my part to make our world more liveable.

A big area where we can improve is our food. With only two people in the house and bulk sizes being a better deal, we end up throwing away a lot of food that has gone bad. I've decided to be more pro-active in what I put into the fridge and ultimately where that food ends up.

Free potatoes I scored for helping on a farm. They were deemed too small for the market.
That starts at the grocery store. There is so much food that gets thrown out because the leaves have a few holes or the carrots aren't a pleasing shape. I've been able to work for the past week at a local organic farm and its amazing to me what ends up being "pig food" rather than "market food". I was able to take home quite a bit of produce in exchange for working. As is often the case, I may have taken more than I can realistically eat. This new blog segment "Leftovers" is going to chronicle my attempt to use everything I bring in.

I decided to try and make one of our favorite appetizers: Greek fries. Before we moved, we used to frequent our favorite Greek restaurant quite often. I was excited to try this at home!



what you need:
potatoes
salt
olive oil
feta cheese

First slice up your potatoes into thin strips.  Drizzle the olive oil over them, and add some salt.

 Set your oven at 350 degrees. Leave your fries in for about 20 minutes. You can buy frozen fries as well, but for my purposes I wanted to use up these potatoes! Once your fries are cooked, add the desired amount of feta cheese. I paired it with a green salad and ate the feta in both parts of the meal!

  7. I have never had Greek fries before, and look wonderful. I am a big fan of feta so we will have to try this soon. We are slowly but surely trying to be more eco-conscious. I am really have trouble with paper towels. I have an phobia of kitchen towels. Weird but true, they are gross and germy to me. Thanks for linking up on Super Sweet Saturday.
