Its finally Fall! Time to break out the coats, hot chocolate and crockpot recipes. This is my favorite time of year and I decided to start it off with a hearty stew. The best thing about crockpot stew is that you can take everything that has been stagnating in your fridge and create something incredible with it. I've made a variation of this stew a few times based on whats in my fridge and each time its great!
Crockpot Black Bean Potato Stew
1 large onion,
1
clove garlic minced
3/4 Tbs chili powder
1 tsp
cumin
1/2 tsp
cayenne
2 Cups vegetable/chicken broth
1 can of black beans, rinsed and drained
1-2 cups of fresh tomatoes, diced
1 Cup canned corn.
3 potatoes
This time around I threw in a bunch of celery that was begging to get out of the fridge. Cut, chop and dice all the vegetables and put them in the crockpot:
Next add the canned ingredients and spices.
Add the broth last, I usually just guestimate and try to get it halfway up the ingredients.
Turn the crockpot to the low setting and cook for about 6-8 hours. If you need it sooner, turn it on high and leave for 3 to 4 hours.
I chose to have mine with a parsley garnish and a slice of Dave's Killer Bread.
